Joseph Tambellini’s Scallops and Shrimp

I saw Chef Tambellini make this dish on the Steel City Chefs cooking show. It looked so good I had to post it here.

5 U10 Dry Scallops (Dry = not treated with preservative)

3 U10 Shrimp, butterflied

1 pat butter

1/4 c dry white wine

4 asparagus spears, blanched

8 cherry tomatoes, halved

3 cloves garlic, sliced thin

1 scallion, chopped

1/2 handful curly parsley, chopped

5 basil leaves, cut into strips

1 c prepared marinara sauce

1/2 c olive oil

Season scallops with kosher salt and black pepper

Saute in olive oil over medium high heat until brown and crusty, about 5 minutes on each side

Add shrimp and saute an additional 2 minutes

Add garlic, scallions and cherry tomatoes and saute an additional 5 minutes

Deglaze pan with white wine

Add marinara sauce, butter and asparagus and warm through, about 4 minutes

Transfer to plate and serve
