Lou’s Stuffed Hot Banana Peppers

My father-in-law’s love for hot peppers and years of fine tuning have made this recipe great.

15 Hot Banana Peppers, stem and seeds removed

1 lb ground pork

1 tsp fennel seeds

4 cloves garlic, finely minced

1/2 onion, medium, diced

1 tsp dried basil

1 tsp dry parsley

1 egg

1/2 c panko bread crumbs

1/2 c pecorino romano cheese

1/2 c red wine

1 tomato diced

1 tsp kosher salt

1 can petite diced tomatoes

  1. In large mixing bowl, beat egg with a little milk
  2. Add ground pork, fennel seeds, olive oil, garlic, onion, basil, parsley, red wine, bread crumbs, cheese, salt and diced tomato and mix thoroughly with hands until all ingredients are well incorporated
  3. Stuff each pepper with the pork mixture using a small espresso spoon and place in a greased 9X13 in. baking pan
  4. Spoon petite diced tomatoes over peppers; add salt; Cover with aluminum foil
  5. Bake at 350 degrees for 40 minutes
  6. Serve with crusty italian bread
