Open Face Omlette AKA "Hobo" Omlette
Making breakfast for a bunch of people can be simple, and stress free or it can be miserable. Here is a recipe and work flow to make it simple, and bullet proof.
5 eggs
1/2# ground sausage
1 medium onion chopped
2 cups diced small potatoes
Cheddar Cheese
Notes:
- *** If you use Russet potatoes (don't!), you have to rinse them after dicing because the high starch content will create a grey gooey mess that cannot be saved.
- The sausage is just one idea. Leftovers work great. Steak, chicken, shrimp, bacon, vegetables all will work.
1. Put the sausage in a pan and cook over med heat
2. Put chopped onion and the potatoes in pan. Push the sausage to the side and spread out the potatoes. Flip em every now and then as they cook. You want everything to get a little browned. Get this part underway first thing because it requires some time to fully cook. Once started, make some coffee, get out dishes, and prepare for the next steps
3. Crack eggs in a bowl and beat with 1 tbs mayonnaise.
4. Once the potatoes/onions/ sausage are done. Heat a skillet with something to prevent sticking (Pam, vegetable oil, butter, or ghee) get it pretty hot but not to the point of smoking your oil. Add the eggs and turn off the heat. Turn on the broiler and use it to cook the top of the eggs.
5. Dump the potatoes/onions/ sausage on the eggs and spread out. Top with Cheddar slices. and put under the broiler to melt
6. Season and Serve (pan is different because I forgot to take a picture and had to use one from a different breakfast). You will need to add salt. I also use a bit of sriracha; This stuff is perfect, not very hot and great flavor.
