I don't use use recipes, I just cook. Some recipes are complete and some not so much. Got a question or need more detail? Ask me. Cowboy Chop


Start off with with a ginormous cowboy chop (Ribeye with the rib bone). Salt and pepper generously

Stick a temperature probe in it. Right in the center, not touching bone. Put it on a "snake" made of aluminum foil to keep it off the cookie sheet


Bake to internal temp of 130 degrees. I set oven to 300 degrees because I was in a hurry. With more time , I would set it at 225 and turn the convection fan on. It took about 90minutes. Notice the thermometer has a cord so you can continuously monitor the temp, and it also has a wireless transmitter so you can carry the unit with you. This way you can hear the alarm go off without having to camp-out in the kitchen



I then put some clarified butter (ghee) in a pan at 400 degrees, and browned the chop for about 2 minutes


There were two of us so I sliced it and served it on a corn salsa and topped it with Roasted tomatillos salsa. If I had roasted it at a lower temp, it would have turned out a little more rare because it doesn't continue to cook as much after removing it from the oven.
